Baked Bacon & Egg Baskets

Ingredients

★   6 large eggs 

★   6 slices of thick white bread

★   6 rashers of streaky bacon

★   ready made hollandaise sauce

★   120g butter

★   green leaves to garnish

Method

 

Step one:

Preheat oven to 180C. Cut the crusts from the bread and gently flatten each slice with a rolling pin until half as thick. Butter both sides of the bread and place into a muffin tray to make a basket.

 

step two:

Crack an egg into each basket season with salt and pepper and bake for 5 miuntes. After 5 minutes add the bacon rashers to the oven and continue to cook both for a further 15 minutes. Meanwhile warm a small pan of holandaise sauce over a low heat.

 

step three:

When cooked serve immediately with the warm holandaise and garnish with fresh leaves and the crispy bacon
